almost 2 times more colors than the Cabernet – Sauvignon, the European variety,
recognized as standard. Dye content in the skin of Saperavi is 6%, to which should be
added to the color the very grape juice. As for the Cabernet – Sauvignon, its skin
contains 3.8% of paints, but its juice does not have any color. Generally, paints are
concentrated in the skin of grapes.
